Established in 1906, their brand Hakuba Nishiki is affiliated with Hakuba’s three famous mountains. Using Omachi rice and the cool, clear water from the Northern Alps, this brewery has sought to make a local Omachi sake that is not too sweet and not too dry, one that people will never tire of drinking.

Ichinoya

A well-established brewery that was founded in 1865. Housing and storehouses remain from the Meiji period. The namako walls along the road and ridges that jut out between the houses (for fire prevention) convey what that time period was like.

Hokuan Brewery

Established in 1923, this brewer offers a faintly sweet flavor that lets the natural taste of the rice shine through. The same small size it has always been, the brewery is able to pay attention to detail and carefully make its Japanese sake. Its Kurazukuri Amazake won an award from the Nagano Prefecture Governor in the first Prefecture Award Ceremony for Amazake. It also won the Grand Prize at the National Fermented Foods Summit in Nagano.
